Yam Fry | Suran kaap

Elephant Foot Yam or Suran, as known in India is a food low in Saturated Fat, Cholesterol and Sodium. Thus, suitable for every age group irrespective of their medical conditions. It is rich in dietary fiber, vitamin c and potassium. Yam tends to have liquids that are irritant by nature, thus when sliced, they are soaked in water to get rid of the liquids. Kokam Syrup tends to further ease the irritant property of Suran. You can also replace kokam syrup with tamarind paste. These filling, delicious & fiber rich crisps can be enjoyed as a side dish with lunch or as an evening snack with a cup of tea.

So let’s get started with Suran Fry Recipe;

Main Ingredients:

1) 250 gram Suran (Elephant foot yam)

2) 2 tsp kokam syrup

Ingredients for Rub:

1) 1 tsp turmeric powder

2) 2 tsp red chilly powder

3) 1 tsp dry coriander powder

4) Salt to taste

Ingredients for coating:

1) 1 tbsp. rice flour

2) 1 tbsp. semolina

3) 1 tsp red chilly powder

4) Salt to taste

Other ingredients:

1) Oil for shallow fry or deep fry

 

Method:

Apply little kokam syrup before handling Suran.

Peel and make thin slices of Suran.

In a big bowl add cold water, kokam syrup and immerse suran pieces in it. Leave them for 1/2 an hour.

Remove all slices from water and add turmeric powder, salt, kokam, red chilly powder and mix well.

Mix rice flour, semolina, red chilly powder and salt together.

Put all pieces in the rice flour mixture one by one.

Heat the oil and shallow fry suran pieces over a medium heat. Place a lid and let them cook from inside.

Flip them and let it fry from another side.

Once cook from both side remove from flame and serve hot alongwith Dal Rice as a side dish.

Serve hot along with Dal Rice as a side dish.
