Serves for 3.

 

Ingredients: 

 

1) 1 Big sized eggplant

2) 2 Big sized Onion

3) 2-3 Green Chillies

4) Chopped Coriander Leaves

5) 1 cup Fresh Yogurt

6) Oil

7) Salt

8) 1 tsp Sesame seeds

 

How to make Vangyache Bharit ? Stepwise

 

Method:

Wash and pat dry eggplant.

Greasing  eggplant with little oil.

Roast eggplant over open flame until the skin scorches and starts peeling off and eggplants start to shrink.

Vangyache bharit – Roasted and mashed eggplant veggie

Keep aside put lid and wait for 5 minutes.

Remove skin and mash the pulp completely.

Take it into a mixing bowl add chopped onion, green chilies, coriander leaves and salt and sesame seeds mix well.

Add yogurt and garnish with coriander leaves.

Serve with bajrichi bhakri.

Baingan Bharta – Served with Bajrichi Bhakri.
