Maharashtrian Usal Pav Recipe
A traditional Maharashtrian curry that is a spicy pulses in a thin watery gravy which is usually eaten with bread. It is famous Maharashtrian breakfast recipe & served in all most eateries.
20 Minutes (Except Soaking Time)
Serve for 2.
1) 1 Cup Mixed Beans
2) 1/2 cup oil
3) Turmeric powder
4) 2 tsp Malvani Masala
5) 2 chopped onion
6) 1 Tomato
7) 7-8 Curry Leaves
8) Coriander Leaves
9) Ginger Garlic paste
11) Salt as per taste
1) 1/2 Cup grated coconut
2) 1 tsp poppy seeds
3) 1 Star Anise
4) 1/2 tsp cumin seeds
5) 1 small Cinnamon
6) 4-5 Black pepper
7) 1 bay leaf
8) 1 Black Cardamom
9) 2-3 Cardamom
10) 3-4 clove
Wash the beans for 3-4 times in water. Soak the beans overnight.
Next day, drain all the water. Take a cotton cloth and place all beans into it and tie tightly to sprout.
Pressure cook sprout till they are cooked.
Do not overcook otherwise it will become tasteless.
In a heated pan add little oil add sliced onions and fry till they become translucent.

Cinnamon, Black pepper, bay leaf, Black Cardamom, Cardamom, clove) except grated coconut fry till their aroma starts to spread in the
Add grated coconut.
Fry till brown.
Keep aside above masala mixture, once it totally cool, grand it and make a fine paste.
Chop tomatoes roughly and blend to a smooth puree in a blender.
In another pan, heat the 2tbsp oil and add curry leaves, chopped onion.
Once the chopped onion become transparent add ginger garlic paste and masala paste, fry for 1-2 minutes.
Add turmeric powder, malvani masala.
Add the boiled sprouts and chopped tomatoes and salt.
Garnish with coriander leaves. You can also garnish with fresh farsan as per your choice.
Serve hot with chapatti or pav as per your choice.
