Suralichi Vadi
Suralachi vadi may look very difficult to make, but it’s not true! We like to share with you the authentic suralachi vadi recipe which will kill the fear and anxiety about making this delicate dish at home.
Suralachi vadi is Maharashtrian version of Gujarati ‘khandvi’.
Suralachi vadi is tempered with mustard seeds, asafoetida, served garnished with fresh grated coconut, chopped coriander leaves.
Suralachi vadi is a perfect snack at tea time.

Serves for 2
Ingredients for Wadi:
1) 1 cup besan (chickpea flour)
2) 2 & 1/2 Cup Butter Milk
3) Turmeric powder
4) Salt to taste
Ingredients for Filling
1) 1/2 Cup grated coconut
2) 1/2 Cup fresh chopped coriander leaves
3) 1/2 tsp ginger paste
4) 2 green chilies
5) Salt to taste
Ingredients for Tempering:
1) 1 tsp Oil
2) 2 tsp Mustard seeds
3) Pinch of asafoetida
4) Curry Leaves
Method:
Whisk buttermilk, besan, turmeric powder, salt and make a smooth paste.
Take a mixing bowl and combine grated fresh coconut, chopped coriander leaves, ginger and green chilly paste and salt to taste mix well and set aside.
Set out about 2 plates grace with oil.
Transfer besan mixture into a non stick pan and heat on a low flame.
Keep on stirring constantly so that you will not get lumps.
Keep on stirring till the mixture becomes thick.
When done, immediately spread batter on a graced plates in thin layer.
Keep aside and let it cool for 5-10 minutes.
Then sprinkle the coconut mixture on the thin layer of besan.
When set, cut with the knife.
Then gently roll each strip into a tight roll.
Remove the roll and keep into a serving plate.
Make the tempering, heat oil add mustard seeds wait till it splutter add asafoetida, curry leaves When done pour it on the roll.
Garnish with grated fresh coconut and chopped coriander leaves and serve.
