Serves for 2.
1) 4-5 Medium size Eggplants
2) 2 Onion
3) 2 Tomato
4) 3-4 tsp roasted peanuts powder
5) 2 tsp malvani masala
6) ½ tsp cumin seeds and coriander powder
8) Turmeric powder
9) Coriander Leaves
11) Salt as per taste.
For stuffing take slices of onion and tomato roasted peanuts powder, cumin and coriander powder, turmeric powder, malvani masala and salt in grander and make a fine paste.
Wash eggplants. Make 4 partial vertical slits of the eggplants.
Do not cut through the eggplant into pieces.
Now stuff these eggplants with the above paste.
Heat oil into a pan add place stuffed eggplant very carefully.
Keep the flame on medium.
Keep on changing position of eggplant. Add remaining mixture of stuffing and little water.
Cover with lid adds little water into lid. Let the eggplants cook in steam.
Once it cooked garnished with coriander leaves and serve with Chapatti, Bhakri or rice it taste very nice.
