Makes: 8 Modak.
Ingredients for the Stuffing:
1)1 Cup grated fresh Coconut
2) 1/3 cup Jaggery
3) ½ tsp Cardamom Powder
4) 1/2 tsp Nutmeg Powder
5) 2 tsp Strawberry Crush
Ingredients for the Ukad:
1) 1 Cup Rice Flour
2) 1 Cup Water
3) Pinch of Salt
4) 1 tsp of oil or ghee
5) Food Color
Directions To make Ukad:
Heat the water in a pan, add salt and ghee and bring to boil.
Turn off the heat and add all rice flour stir it and mix well.
Cover and keep aside for 10 minutes and let the steam trap inside to cook the dough.
Directions To Make Stuffing:
Scrape coconut. If you get 2 cup of coconut, you take 1 cup of jaggery.
Heat the ghee in a pan add the coconut and jaggery together into a pan over medium low heat.
Add Strawberry Crush and cardamom powder and Nutmeg Powder. Mix it well. Once mixture is thick, turn the heat off.
Modak Preparation Method:
Take dough in a plate and rub it with hands.
Put little bit oil if needed.
Add Food Color and rub it.
Make small ball (epx 2 inch) of dough. Keep the remaining dough covered.
Spread ball on hand and make bowl.
Put 1tsp of coconut mixture in it and Pinch the bowl on the edges 5-6 time. Pull them together and join them.
Prepare all the modak while preparing covered them in damp cloth.
Steam cook in to the modak steamer (modak patra) for 12-15 mins.
Cool and Serve.
