Shrikhand Recipe | How to make Elaichi Shrikhand Recipe

Elaichi shrikhand is popular in regions of Maharashtra.

This recipe doesnt need any introduction. Everyone knows this creamy sweet preparation.

The perfect marriage of aromatic cardamom with the creamy base of yogurt and sugar makes this dish truly ‘irresistable’.

Ingredients for hung curd:

4 Cups fresh full fat dahi

 

Ingredients for shrikhand:

1) 8-9 tbsp Sugar

2) 4-5 Green cardamoms

3) Dry fruits of your choice

 

How to make Hung Curd

Use homemade curd. It should be fresh and not sour one.

Spread clean muslin cloth.

Place curd in the center.

Wrap it from all sides and tightly tie muslin cloth.

Gently press it and hang curd for around 4-5 hours.

If you are keeping for overnight then hang it in refrigerator.

Place an empty container or bowl below it to collect the whey.

You can use this whey in chapati aata or even in rice. Do not waste it.

After 4-5 hours untie cloth and transfer all curd to bowl.

How to Make Shrikhand:

Mix properly  with  a hand beater.

Add sugar.

Again, repeat the process of  mixing with a hand beater.

The sugar should starts dissolving in the mixture.

Check the taste and add more sugar if required.

Add Cardamom powder and mix with spoon.

Garnish with chopped dry fruits and keep into refrigerator and serve whenever you need.

Serve with poori or after lunch or dinner as desert.
