Pitla is a chickpea flour based Maharashtrian dish, also famous in the regions of Karnataka. This besan based dish is an extended version of the Maharashtrian zunka. Zunka is the drier version of Pitla, though both taste best with chapatti. If you wish to serve this rice, then add more water and make the Pitali less thick. Pitla is best for the days you have ran out of vegetables at home or for the days you are in a hurry. Made with minimum ingredients and within minutes, this is delicious and easy to digest. Pitla is a great substitute to your everyday dal. It’s spicy tempering and coriander garnishing makes it an absolute treat.

Preparation Time: 10 Minutes

Cooking Time: 15 Minutes

Total Time: 25 Minutes

Serves for 3.

 

Ingredients:

1) 1 cup Besan (Gram Flour)

2) 4 cup Water

3) 3 tsp Oil

4) 1/2 tsp Mustard Seeds

5) Pinch of asafoetida

6) 4-5 Curry Leaves

7) 2 chopped onion

8) 1/2 tsp ginger garlic paste

9) 1/2 tsp Cumin seeds powder

10) 1 tsp red chilly powder

11) 1/2 tsp turmeric powder

12) Salt to taste

13) Chopped coriander leaves for garnishing

Method: 

In a mixing bowl take besan, red chilly powder, turmeric powder, cumin seeds powder, salt and water, mix well and keep aside.

Heat oil for tempering add mustard seeds and let them crackle.

Add curry leaves, asafoetida, chopped onion and sauté for 3-4 minutes.

Add ginger garlic paste and sauté on a low flame.

Pour besan mixture, continuously stirring it.

Cook till it becomes little thick.

Put a lid and let it cook for another 3-4 minutes on a low flame.

Garnish with chopped coriander leaves.

Serve hot with chapatti or bhakri.

6) Put a lid and let it cook for another 3-4 minutes on a low flame.

7) Garnish with chopped coriander leaves. Serve hot with chapatti or bhakri.
