Phodnicha bhat | Seasoned Rice Recipe
Phodnicha bhaat is one recipe of which all the Maharashtrian are aware and they make it too.
Every household has a different recipe to make phodnicha bhat at home.
We would like to share our version. Phodnicha bhaat literally translates to ‘tempered rice’.
Cooked rice or left-over rice is used for the dish. It is the best makeover you can give to your rice.
The aromatic spices that go in the tempering process gives your rice a different look altogether. You may eat yummy phonicha bhaat for your breakfast, brunch, and lunch, dinner as a main dish or also as a side dish.

Preparation Time: 10 Minutes
Cook Time : 10 Minutes
Total Time: 20 Minutes
Ingredients:
1) 2 cup Steamed cooked rice
2) 1 tbsp oil
3) 5-6 crushed or chopped garlic cloves
4) 4-5 curry leaves
5) 1/2 tsp mustard seeds
6) 1/2 tsp cumin seeds
7) A pinch of hing
8) 1 slice onion
9) 1 small sized potato
9) Turmeric powder
10) Red chilli powder
11) 1 tbsp peanuts
12) Salt as per taste
13) 1/2 tsp sugar
14) Chopped coriander leaves
Method:
Heat oil in pan add peanuts and let them fry till they turn to golden brown and crispy.
Take out peanuts once it fried and keep aside.
In same oil add chopped garlic cloves and saute till brown.
Add mustard seeds, cumin seeds, curry leaves, hing and add sliced onion, saute and fry until translucent.
Add sliced potato saute and cover with the lid on medium low heat for 5 minutes and let the potato cook.
Once the potato cooked properly then add turmeric powder, red chilly powder saute for a minute.
Add cooked rice along with salt.
Mix it well and add 1/2 tsp sugar for taste and simmer the flame, put lid and let it cook for another 5 minutes.
Garnish with chopped coriander and fried peanuts and serve with roasted or fired papad.
