Shengdanyachi Amti is a Maharashtrian peanut curry recipe often made during the fasting day of

Ekadashi.

Made using roasted groundnuts and coconut is an extremely easy and quick recipe.

Heavy and filling, this Peanut Amti is an excellent fasting companion that is also very delicious.

Every Marathi household’s fasting companion, this Peanut Curry a flavorsome dish loaded with grated coconut.

So let’s get started with Shengdanyachi Amti recipe.

 

Preparation Time: 15 Minutes

Cooking Time: 10 Minutes

Total Time: 25 Minutes

Serve for 2.

 

 

Ingredients For Curry: 

1) 1 Cup Peanuts

2) 3/4 Cup freshly grated coconut

3) 2-3 Green chilli

4) 1/2 cup chopped coriander leaves

5) Salt as per taste

 

Ingredients for Tempering:

1) 2 tsp oil

2) 1/2 tsp cumin seeds

3) 5-6 Curry leaves

 

Method:

Dry roast peanuts and keep aside to cool completely.

Peel it.

Mix  peanuts, grated fresh coconut, green chilies, coriander leaves and grind all together to a paste.

Heat oil in a pan, add cumin seeds, curry leaves and prepare tempering.

Add paste and stir it for a minute and add salt.

Let it cook for another few minutes

Garnish with coriander leaves and serve with samo rice.
