Varichi Pangi is a Samo Rice flour version of the otherwise widely made rice flour Pangi in Maharashtra. Pangi is the Maharashtrian version of the very famous Gujarati Dish – Panki. This flour based dish is cooked in between two banana leaves that adds to its flavor. This Panki is a faral recipe i.e. it is ideal for fasting days. This Varichi Panki tastes best when served with peanut curry. This delicious, mouthwatering dish tastes its best when served hot. A must make recipe in every Maharashtrian home during Navratri, this Samo Rice/Varichi Pangi is a quick and easy indulgence you can make while fasting.
So let’s get started with Varichi Pangi;
Preparation Time: 5 Minutes
Cooking Time: 15 minutes
Total Time: 20 Minutes
Serves for 2.
Ingredients:
1) 1 cup Vari Flour
2) 2 crushed chillies
3) Salt as per taste
4) Ghee
5) Banana Leaf
Method:
In a mixing bowl add varai flour, salt and crushed green chillies.
Mix well and knead dough by adding sufficient water.
Wash banana leaf and cut into pieces.
Take little dough and press it down with your fingers to roll it out on one side of banana leaf. Press and make like a thalipeeth, if it feels sticky, use little water.
Now fold the other half of leaf over it and press with your fingers.
Make all the remaining pange like wise and keep aside.
Now heat tava and put pange on heated tava.
Cover it with lid and let it cook for another 5 minutes.
Turn it over and let it cook for another 3-4 minutes.
Remove form tava and remove banana leaf garnish with ghee and serve with peanut curry.
How to make pangi with images:
