1) 1 cup rajgira flour
2) 1 Small potato
3) Rock salt as required
4) Water if required

How to make Rajgira Puri – Know the tips and methodology
Boli the potato.
Add rajgira flour in a mixing bowl.
Let the potato cool completely.
Peel and mash it and add it to rajgira flour.

Add salt and little water if required and knead it.
Take care while adding the water the dough should not be sticky.
It should be smooth and stiff but not hard also.
Knead it well untill smooth.
Rajgira Puri Dough
Cover and keep aside for 15 minutes.
Make small balls from dough.
Dust the balls in flour and make small sized poori.

Roll it out into small circles with medium thickness.
Heat oil to deep fry.
To check the right temperature of oil put a small piece of dough.
It will rise immediately at the same time.
Immediately slides the poori after a few seconds slightly press the poori with slotted ladle and flicker hot oil on top of it.
It will help poori to puff up nicely.
Fry until golden yellow. Drain excess oil.
Repeat the process for the remaining dough.
