Preparation Time: 20 Minutes
Cooking Time : 15 Minutes
Serves for 2.
For The Rice:
1) 1 1/4 cup Basmati Rice
2) 2 tsp Ghee
3) 1 tsp Cumin Seeds
4) 2-3 Cloves
5) 1 stick of Chinamon
6) 2 Bay Leaf
7) 2 cardamom
8) 1/4 tsp Turmeric powder
9) Salt to taste
For The Sprouts and Vegetable Mixture
1) 1 cup boiled mixed sprouts
2) 1/2 cup chopped vegetables( french Beans, Green peas)
3) 1 tbs ghee
4) 1/4 cup chopped onion or spring Onion
5) 1 tsp ginger garlic paste
6) 1/2 tsp chilli powder
7) 1 tsp pav bhaji masala
8) 1/2 cup chopped tomatoes
9) Coriander leaves
10) Salt to taste
For the rice:
Heat the water in a pressure cooker and add the cumin seeds, cloves, cinnamon, bay leaf and cardamom, ghee, the turmeric powder and saute on a medium flame for a minutes.
Once the water boiled add salt and rice and saute on a medium flame for another 2 minutes.
Mix well and pressure cook for 2 whistle.
Allow the steam to escape before opening the lid.
And keep aside.
For the Sprouts and vegetable Mixture:
Heat the ghee in a pan, add the onions and cook on a medium flame for 2 minutes.
Stir it continuously.
Add ginger garlic paste, chilli powder, pav bhji masala, 2 tbsp of water, mix well and cook on a medium flame for 1 minute and stir it continuously.
Add the tomatoes and little water and mix well and cook on a medium flame for 2 minutes.
Add boiled sprouts, boiled mixed vegetables 2 tbsp water and cook on a medium flame.
Add the salt and coriander mix well and cook it.
How to proceed:
Add the rice into the sprouts and vegetable mixture, mix lightly and cook on a medium flame for 1 minute.
Fill the rice and sprouts vegetable mixture in a bowl.
Serve hot with riata.
You can use leftover rice.
You can use any sprouts as per your choice.
You can use any vegetables as per your choice.
Don’t overcook sprouts, it should be little crunchy.
