So let’s get started;

 

Preparation Time: 20 minutes 

Cooking Time: 20  Minutes

Total Time: 40 minutes

Serves for 3.

 

Ingredients:

For Usal:

1) 2 cup sprouted Matki

2) 1/2 cup chopped onion

3) 2 tsp malvani masala

4) 1/2 tsp turmeric powder

5) 1/2 tsp garam masala powder

6) Pinch of asafoetida

7) Salt as per taste

8) 2 tbsp Oil

For masala paste:

1) 1 sliced onion

2) 1 cup freshly grated coconut

3) 2 tsp Oil

 

Method:

Sprout the matki in advance to make the usal.

For preparing masala paste, heat oil on a tava, add onion and sauté till translucent.

Add freshly grated coconut sauté till brown, fry this masala on a low flame.

Once done, remove from flame.

When this masala cools down, grind it to make a paste and keep aside.

Heat oil in a pan, add the chopped onion, asafoetida and sauté it.

Now add the sprouted matki, malvani masala, turmeric powder, garam masala and mix it well.

Add little water and let it cook for 5 minutes.

Once the matki has cooked properly, add the coconut masala and mix well.

Add salt and cook for another 5 minutes.

Do not overcook the matki beans, as overcooking will reduce its taste.

Check the taste of the usal and if required add salt and masala as per your taste.

Matki Usal it ready to serve.
