Bhindi or Okra, also known as lady finger is one dish your kids are sure to hate. But wait! That doesn’t keep you away from feeding this potassium loaded, low calorie vegetable. Just make your bhindi in this Masala Bhindi style and leave your family asking for more. This high fiber, vitamin rich vegetable tastes best when blended with spices. This Masala Bhindi recipe comes from the Maharashtrian cuisine which strongly has the essence of Maharashtrian masala. As Bhindis are a doctor approved veggie even for the diabetics, this vegetable should be among your regular ones. This Bhindi Masala tastes best with Chapattis or roti.

So, let’s get started with the Bhindi Masala Recipe;

 

Preparation Time: 10 Minutes

Cooking Time: 10 Minutes

Total Time: 20 minutes

 

Ingredients:

 

1) 1/4 kilo lady finger

2) 2 chopped onion

3) 1 chopped tomato

4) 1/2 tsp cumin seeds powder

5) 1/2 tsp coriander powder

6) 1 tsp red chilly powder

7) 1 tsp sugar

8) 1 tsp pav bhaji masala

9) Oil for deep frying

10) Salt to taste

 

Method:

 

Wash and dry the ladyfinger or wipe with a wet cloth. Cut both the ends of ladyfingers.

Cut into one inch pieces.

Heat oil for deep frying.

Deep fry bindis and keep aside.

Heat 2 tbsp. oil for making masala bhindis, add chopped onion and sauté it.

Add chopped tomatoes, cumin seeds powder, coriander powder, red chilly powder, pav bhaji masala, salt,sugar and mix well.

Add fried Bhindis and gently mix.

Serve with chapati or varan bhat.
