Mango season is here, let’s preserve our favourite fruit by pickling it.

‘Kairi lonche recipe’ as it’s called in Marathi, is the perfect way to make mango pickle.

It is the most important part of the complete Maharashtrian Thali.

Mango pickle is best eaten with hot dal-rice or rice and amti.

Mango pickle is also a deliciously sour and tangy side dish that can be enjoyed the year long.

 

Preparation Time: 24 hours

Cook Time: 10Minutes

Total Time: 24 hours and 5 minutes

 

Ingredients:

1) 4 Raw mangoes

2) 2 tbsp split of mustard seeds

3) 1/2 tsp Methi Seeds

4) 1 tsp turmeric powder

5) 1 &  1/2 tsp Salt

6) 3 tsp Red chilly powder

7) 3 tbsp Oil

8) 1/2 tsp Asafoetida

 

Method:

Wash, dry mango. If possible wipe with clean cloth.

Chop mangoes and add turmeric powder and salt mix it and keep aside.

You can keep in sunlight for 1 day.

Dry roast methi seeds and make powder of it and keep aside.

Dry roast split mustard seeds.

Once the roasted ingredients turns to room temperature add one by one to chopped mango.

Add roasted mustard seeds and methi seeds, red chilly powder in chopped mango mix well.

By the time heat oil and turn off the flame and add asafoetida and keep aside.

once the oil cool down pour on the mango mixture and mix well.

Set aside for 24 hours. Stir it well on next day.

Store this pickle in a clean glass jar.

Tips:

1) Use raw Ratnagiri Alphonso mango for rich flavour.

2) Care to be taken that the jar used for preserving should be clean and dry, while transferring the mango pickle.

3) Store in air-tight jar for longer shelf-life.
