Maharashtrian Potato bhaji

Serves for 2.

 

Ingredients:

1) 2-3 Boiled potatoes

2) 5-6 green chilies

3) 1/2 cup peanut crush

4) 4-5 curry leaves

5) 1/2 tsp cumin seeds

6) Coriander leaves

7) Grated Coconut

8)  1 tsp sugar

9) Oil to tempering

10) Salt

 

Method:

Heat oil for tempering add cumin seeds and curry leaves.

Add chopped green chilies.

Once chilies are done add peanuts crush and saute for another 5 minutes.

Add potato cubes and salt keep a lid and let it cook for another 5 minutes on medium low heat.

Add sugar, grated coconut and chopped coriander leaves and serve hot.
