Vegetable Korma or Kurma is a well-known dish in India as well as central Asia. It is usually a mix of vegetables cooked in a base of curd or coconut paste or coconut milk along with spices and the usual onion/tomato paste. This vegetable korma recipe is a maharashtrian version of the recipe that uses fresh coconut paste instead of curd. Veg kurma bhaji is a delicious way of enjoying a mix of your favourite veggies in a lip-smacking gravy. To make perfect veg kurma bhaji, make sure you don’t overcook the veggies. Though garnishing with grated coconut is an optional step, adding it enhances the flavor as well as the texture of the curry.

So let’s get started with Veg Kurma Bhaji;

 

Preparation Time: 10 Minutes

Cooking Time: 20 Minutes

Total Time: 30 Minutes

Serves for: 4

 

Ingredients:

 

1) 250 grams cauliflower

2) 1 cup fresh green peas

3) 1/2 cup Chopped fresh red carrot

4) 1/2 cup potato cubs

5) 1 chopped onion

6) 5-6 cashew nuts

7) 2 tbsp. oil

8) 1 medium sized chopped tomato

9) 1 tsp ginger garlic paste

10) Pinch of asafoetida

11) 2 tsp red chilli powder

12) 1 tsp garam masala powder

13) 1/2 cup chopped coriander leaves

 

Ingredients for Masala:

 

1) 1 cup grated fresh coconut

2) 1 chopped onion

3) 1 tsp poppy seeds

4) 4-5 black paper

5) 1 bay leaf

6) 2 tsp oil

 

Method:

 

Preparation of Masala:

 

Heat oil for masala, add chopped onion and sauté until light brown.

Add poppy seeds, black pepper, bay leaf, grated fresh coconut and sauté until coconut turns light brown.

Switch off flame and let it cool completely, grind and make a paste.

 

Preparation of Bhaji:

 

Mix chopped cauliflower, potato cubes, green peas, fresh green beans, chopped fresh red carrot and boil till 1 whistle in pressure cooker.

Do not overcook the veggies.

Heat oil, add chopped onion, curry leaves, ginger garlic paste and sauté it.

Add chopped or grated tomato until mushy.

Add onion-coconut mixture and mix it.

Add red chilli powder, garam masala powder, turmeric powder, and sauté it.

Add half cooked vegetables and sauté it. Add 1/2 cup water, salt, cashew nuts and mix it.

Cover and cook vegetables for 5 minutes on medium flame.

Let it cook for few minutes, garnish with chopped fresh coriander.

Serve with chapati or plain rice.

2) Add poppy seeds, black pepper, bay leaf, grated fresh coconut and sauté until coconut turns light brown. Switch off flame and let it cool completely, grind and make a paste.

5) Add red chilli powder, garam masala powder, turmeric powder, and sauté it.
