One of the traditional Maharashtrian snacks – Kothimbir vadi.
My pleasure to share the authentic recipe for kothimbir vadi with you.
Crispy on the outside and soft inside, a perfect combination of taste and tecture.
It can be prepared by steaming the mixture and frying it in hot oil. Best served with tomato ketchup and green chutney.

Kothimbir Vadi Recipe – The Ingredients
Ingredients:
1) 2 Cups Fresh Coriander Leaves
2) 1 Cup Gram Flour(besan)
3) 1 tsp Rice Flour
4) 3-4 chopped green chilies
5) 1 tsp Turmeric Powder
6) 1 tsp Cumin Seeds
7) 1 tsp Ginger Garlic Paste
8) A pinch of asafoetida
9) 1 tbsp Sesame Seeds
10) Salt as per taste
11) Sufficient water
12) Scraped coconut
How to make Kothimbir Vadi
Method:
In a mixing bowl mix chopped coriander leaves, gram flour, rice flour, chopped green chilies, turmeric powder, cumin seeds, ginger garlic paste, asafoetida, few sesame seeds, salt and add sufficient water to make a thick batter.
The consistency of batter should not be very thin or thick.
Grace the plate with little oil at the base and sides.
Pour the batter mixture on graced plate.
Place the plate into steamer and steam on high heat for 15 minutes.
After 15 minutes just insert the knife into vadi and if it comes out clean, then it is cooked otherwise cook for another few minutes.
Remove from flame, cool and cut into square or diamonds shape.
You can shallow fry or deep fry as per your choice.
If you are shallow frying than heat little oil in pan, add sesame seeds and sliced vadi and fry till crisp and brown.
You can also deep fry the vadies.
Garnish with scraped coconut, sesame seeds and serve with sauce or green chutney.

Step 1:
