WRAP THE HAM TIGHTLY IN ALUMINUM FOIL – After placing the ham in the pan, ENSURE that it is tightly wrapped in aluminum foil. You want NO steam to escape from the pan. The steam warms the meat and maintains its moisture content. Invest in LONG, HEAVY-DUTY aluminum foil because it is extremely difficult to adequately cover your ham with inexpensive, thin, short aluminum foil.
