Serves for 2.
Ingredients:
1) 1 Cup cashew nuts (Ole kaju)
2) 1 potato medium size
3) 1 medium size tomato
4) 2 tsp Malvani Masala
5) 1 medium size onion
6) 2 tbsp fresh coconut and onion masala mixture
7) 1/2 tsp garam masala
8) Pinch of asafoetida
9) 1/2 cup water
10) Chopped coriander leaves
11) Salt as per taste
Method:
Soak cashew nuts for 30 minutes. Peel them.
Make coconut and onion masala mixture (vatan).
Heat oil in kadai add asafoetida, chopped onion and saute till translucent.
Add chopped tomato and wait till it turn to mushy.
Now add potato cub saute for few minutes and add malvani masala, garam masala mix it.
Add peeled cashew nuts and saute for a minutes and add 1/2 cup water and salt as per taste, keep a lid and let it cook on medium low heat for 10 minutes.
Once the cashew nuts and potato cooked add coconut and onion masala mixture and again cook for more 5 minutes.
Garnish with chopped coriander leaves.
Serve with bhakri or chapati.
How To Prepare Kaju Masala
Method:
1) Soak cashew nuts for 30 minutes. Peel them.
2) Make coconut and onion masala mixture (vatan).
3) Heat oil in kadai add asafoetida, chopped onion and saute till translucent.
