Ingredients for Stuffing and Cover of gujiya recipe
1) 1 cup of green peas
2) 2 Green chillies
3) 1/2 cup Chopped coriander leaves
4) 1/2 tsp dry coriander and cumin seeds powder
5) 1 tsp turmeric powder
6) 1/2 tsp sesame seeds
7) Oil to tempering
8) Salt to taste
1) 1 Cup All Purpose Flour
2) 1 Cup Wheat Flour
3) 1/2 Cup semolina (rava)
4) 1/2 Cup Oil
5) 1 tbsp Corn Flour
7) Oil to frying
Hirvya Vatanyachi (Matar) Karanji Recipe Step-By-Step Procedure
Combine all purpose flour, wheat flour, semolina, corn flour, salt and hot oil and mix well.
Add little water and knead into a firm using little water.
Knead very well for 5-10 minutes.
Keep covered under a wet muslin cloth and keep aside for next 1 hour.
Heat little oil and add green peas and statue for 2-3 minutes, remove it and keep aside.
Grind green peas and make a crush of it.
In a heated oil Sesame seeds, grated green chillies sauté for a minute and add crush, coriander and cumin powder, salt and keep a lid and cook for 5 minutes.
After 5 minutes remove lid and add some coriander leaves and remove from flame.
Keep aside to cool.
How to proceed:
Divide the dough into equal small part.
Roll the balls using a rolling pin and roll into a poori.
Place one portion of the filling mixture in the centre of the rolled dough circle and fold over to make a semi circle and thinly flute the edges to seal it.
Heat sufficient oil in a kadhai and deep fry each karanji on a medium heat till it turned into golden colour and crisp.
Serve hot or warm.
