Gajar Halwa is a sweet recipe made of Carrot, milk and sugar.  Carrot halwa is one of the easiest Indian sweet recipe as it barely takes any preparation.  You can add different nuts to this Carrot halwa as per your choice. Carrot halwa is usually made in winter when fresh and red carrots in season.

So, let’s get started with Gajar Halwa Recipe;

 

 

Preparation  Time: 15 Minutes

Cooking Time: 1 Hour

Serves for 4.

 

Ingredients:

 

1) 1 kg Carrot

2)  Sugar 2 Cup

3) 1  Liter Milk

4) 6 tbsp Ghee

5)  ¼ tsp cardamom powder

6)  ½ Cup chopped  Cashew nuts (or any dry fruit of your choice)

 

 

Method:

 

Rinse, peel and grate the carrots with a hand grater.

Take a heavy bottomed pan and transfer grated carrots.

Add ghee and put it on low flame.

Saute for 15-20 minutes.

The co lour of carrots would have completely changed.

Now add hot milk to the cooked carrot and increased the flame to medium.

Let the carrots cook in milk till the entire mixture almost becomes dry.

Do keep on stirring  to avoid the carrot sticking to the bottom of the pan.

Let the carrot cook over medium heat.

Once the milk absorbed add dry fruits and sugar.

Now add cardamom powder

Keep stirring until mixture becomes thick.

When done switch off flame and allow to cool.

Serve hot, warm or cold.
