Rectangle Cafeteria Pizza

It was mostly in the 1990s that I spent my early schooling years, and I recall the cafeteria bringing out very cheesy rectangles of pizza with a thin crust every Friday. Pizza Friday was a day that everyone looked forward to! In later years, I found that ″rectangle pizza″ was a more common phenomenon that existed in many schools other than my own little, rural educational institution in East Tennessee. If you remember your school cafeteria pizza, I’m sure they were prepared on endless, giant sheet pans and served to hungry students. However, you can make a pretty close alternative for school cafeteria pizza at home to help you recapture some of your childhood memories. To make things as simple as possible, I utilized a prepared dough ball that I purchased from my local grocery shop (Kroger). If you don’t want to spend the time making your own dough, I urge that you do the same. Although you could theoretically use canned pizza dough for this pizza, because it is baked on a big 10×15-inch baking sheet, the dough from the cans will be quite thin when pressed into the pan when it is pressed into the pan. In terms of toppings, I recall my school primarily offering the simple cheese kind, while there were occasional days when meat options were available as an option. When making your homemade school lunch pizza, you may stick to the basic ingredients, but you can also customize it with any of your favorite protein or vegetable toppings. One of the most distinguishing characteristics of traditional school rectangle pizza, in my opinion, is that there is very little visible crust around the perimeter. I used 1 pound cooked ground sausage, 1 8-ounce bag of shredded mozzarella cheese (you may add more if you like), and 1 8-ounce bag of cooked hamburger beef.
- Preheat the oven to 425 degrees Fahrenheit. A tiny amount of cornmeal or semolina flour should be strewn around the bottom of a 10×15 baking pan after brushing it with olive oil Apply pressure to the dough with your fingertips to press it into the pan, ensuring that it is the same thickness all of the way to the edge.
- Brush the top of the dough with extra olive oil and pierce it all over with a fork to make it seem more rustic. Bake for 5-7 minutes at 350 degrees. While baking, if bubbles begin to form, reach in with a fork and poke them to allow the gas to escape
- While the crust is pre-baking, combine the tomato sauce, tomato paste, Italian seasoning, garlic powder, onion powder, black pepper, and sugar in a large mixing bowl until well combined. Make a few little adjustments to spices as required – if the sauce is still too acidic, add a little more sugar.
- Spread the sauce over the pre-baked crust, extending it all the way to the edge of the pie. Meat, vegetables, pepperoni, or any other desired toppings can be added on top. Spread an even layer of mozzarella cheese on top of it.
- When making a school pizza, make sure that the toppings and cheese extend all the way to the edge of the crust
- otherwise, it will seem sloppy.
- Bake for 8-10 minutes, or until the cheese is melted and bubbling, whichever comes first. Cut into rectangles and place on a plate to serve

- I purchased pre-made dough balls from my local supermarket (see here) You may also use canned pizza dough if you like, but your crust will be much thinner due to the fact that such cans are typically 10-12oz in volume. Preparation time: 10 minutes
