Recipe: The Grandma Pizza from Grandé Cheese

Ingredients:
- 8-ounce pizza dough ball, slacked
- 9-ounce pizza dough ball, slacked (9 slices) Grande Avorio Fresh Mozzarella, sliced
- Grande Avorio Fresh Mozzarella, sliced
- Hand-crushed plum tomatoes (about 5 ounces)
- 3 ounces of tomato sauce, already made
- 1 14 cup chopped basil
- 212 ounces extra-virgin olive oil, split
- Gourmet gratin with Grande Romano cheese, grated to taste
- sea salt, black pepper, and oregano, grated to taste
- To sprinkle with garlic oil
Directions:
- 9 oz. Grande Avorio should be cut into 9 pieces. Pour 112 ounces of olive oil into a 12″ × 12″ pan and swirl it around to coat the interior of the pan. Place the dough on a pan and coat it with oil to prevent sticking. Extend the dough out to the edges of the pan and let it aside for one hour in a warm location. Repeat this process to gently press dough out to the corners of the pan. Make a little dimple in the dough with the tips of your fingers. Preheat the oven to 500° to 550°F and bake your pizza for 8 to 9 minutes.
- Remove from heat and put aside 5 ounces hand-crushed plum tomatoes and 3 ounces tomato sauce
- Remove the pizza from the oven and drizzle the remaining 1 oz. of olive oil along the sides of the baking pan to finish it off. Grande Avorio slices are placed on top, leaving a 12″ border around the outside edge. Reheat the pizza for 2 to 3 minutes, or until the cheese is melted and the dough is brown, before removing it from the oven. Using tongs, carefully remove pizza from oven and pan, cut into 9 pieces, and distribute the blended sauce diagonally over the pie. To finish, season with salt, pepper, oregano, grated Romano cheese, basil, and olive oil.
