Just before our dear buddy Marshall moved away, he invited us over for one more get-together.While we were enjoying an eclectic mix of music, people, games, and beer, Marshall approached us and offered us a piece of Amy’s Pizza, which we accepted without hesitation.Amy’s pizza, however, is not just any Amy’s pizza.A shiitake mushroom, roasted red pepper, and artichoke pizza made by Amy, with roasted red peppers and artichokes on top.And with that, we were completely captivated.Time has been in short supply over the past month or two, thanks to the kitchen renovation project, which has caused complete pandemonium.
- And I have to admit that we have sent quite a few of our bucks Amy’s way in the past year.
- We did, in fact, become pizza addicts.
- When I am actually cooking, as opposed to simply removing a frozen pizza from its cardboard box, I am at my happiest.
- As a result, I set out to create my own version of ‘Amy’s Pizza.’ Which brought me to the question of what else I could do with that can of artichoke hearts that was languishing in the back of the cupboard, abandoned and forgotten?
- It was my idea when I designed this recipe to make 4 individual pizzas that could be stored for later use in modest projects that evolved into massive time-sucking emergencies.
- But, c’mon, who am I kidding?
- This pizza is just too delicious to save for later consumption for dinner and lunch the following day.
Materials
Pizza Dough
- 1 cup plus 3 tablespoons warm water
- 1 teaspoon agave
- 1 tablespoon yeast
- 2 cups whole wheat flour
- 1 cup spelt flour
- 2 tablespoons olive oil
- 1 tablespoon crushed rosemary
- optional: cornmeal and garlic powder
- 1 cup plus 3 tablespoons warm water

- 1 can artichoke hearts

- 0.5 pound mushrooms (crimini or shiitake), stems removed, cut into 3/4 inch pieces

Dough
1.Dissolve the yeast in the warm water with the agave nectar.In order to avoid overheating the water, it should be just slightly warmer than lukewarm.2.Stir in the whole wheat flour, followed by the oil and rosemary.3.
- Stir in the spelt flour and pour out onto a floured surface; knead for 5 minutes, adding additional flour as needed, until the dough is no longer tacky.

- 4.Divide the dough ball into four equal portions.
- Using a few drops of olive oil, coat the insides of four bowls.
- Each dough ball should be placed into a basin and turned once to coat it with oil.

- Cover the dough with a slightly wet cloth and let it aside to rise for 1 hour in a warm location.
(This can be found pretty much anyplace in our house these days.)

1.Lightly coat the peppers and artichoke hearts with olive oil and roast in the oven for approximately 20 minutes at 425°F.Cutting the peppers into strips, roasting them, and then cutting them again into bite-size pieces was an extra step for me, so I made it easier on myself.So, instead of doing as I advise, just cut them into 0.5-0.75 inch pieces to begin with, rather than as I do.Keep an eye on them while they cook since they may be done in less than 20 minutes.2.
- While the other vegetables are cooking, caramelize the onions and mushrooms until they are golden brown.
- Using a large skillet, heat a couple tablespoons of olive oil over medium-low heat until shimmering.
- As soon as the oil is heated, add the onions and a pinch of salt to taste.
- Cook for about 10 minutes over medium low heat, stirring occasionally, before adding the mushrooms (and white wine, if desired).
- Keep the mixture cooking for another 5-10 minutes over a low heat, stirring often, until it is soft and golden brown in color.
Crust
1.Preheat the pizza stone for 3-4 minutes at 425 degrees Fahrenheit.2.Remove the stone from the oven and place it on a flat, covered surface.Sprinkle the top with cornmeal, garlic powder, and a pinch of flour.3.
- Place two dough balls on the stone and flatten them into circles with your fingertips or a rolling pin.

- Place in the oven and precook for approximately 3 minutes (until dough form bubbles but is not brown).
Putting it all together
To assemble each pizza, pour 1/8 of the onion and mushroom mixture onto the crust, followed by 1/4 of the peppers and artichoke hearts. 1/8 of the onion and mushroom mixture should be placed on top. Bake for approximately 8-10 minutes after returning to the oven. 3. Remove from the oven and set aside for a minute to cool. Then it’s time to serve and enjoy!
