Dind or Dinde is an Indian Sweet Pastry made of Chana Dal (Split Bengal gram) mixture

and wheat flour covering, slathered with ghee. This Dind recipe is very healthy unlike

other sweet dishes as this consists of goodness of wheat, chana dal, flavor of jaggery with

absolutely no frying as it is steamed to perfection. It makes an ideal sweet dish for those on

Preparation Time: 20 Minutes

Cooking Time: 30 Minutes

Total Time: 50 Minutes

 

Ingredients for stuffing:

1) 3/4 cup Chana Dal (Split Bengal gram)

2) 3/4 cup Jaggery

3) Nutmeg powder

4) Cardamom Powder

5) Dry fruits

6) 2 & 1/2 cup water

 

Ingredients for Cover:

1) 3/4 cup wheat flour

2) 1 tbsp oil

3) Salt for taste

 

Ingredients for Garnishing:

1) Ghee

Method:

 

How to prepare stuffing: 

Soak chana dal for 15 minutes.

Pressure cook chana dal until soft.

Drain all the water from cooked chana dal.

Grate jaggery and mix with drained chana dal.

Keep this mixture on medium low heat in heavy bottom pan.

Cook stirring frequently.

Once the mixture becomes thick, remove from flame.

Add cardamom powder, nutmeg powder, dry fruits and mix well.

Keep aside and cool the mixture.

 

How to prepare the cover:

Heat  oil.

Mix the wheat flour and salt, add heated oil and mix well.

Use water and make stiff dough. Keep aside for 20 -25 minutes.

 

How to proceed further:

Make a ball of dough.

Roll it and make a circle.

Place little stuffing in the middle and fold into square.

Roll and fill all the remaining dind in the same way.

Keep the steamer on the flame.

In a plate place a thin cloth. Place the dinde on the plate.

Keep into a single layer.

Keep the plate in the steamer and steam dinde for 10 minutes.

Serve hot.
