Who doesn’t like potatoes? Baked, boiled, fried or roasted, with or without skin, everyone loves potatoes! Potatoes are a great source of potassium and vitamin C. Not only that but they are rich source of dietary fiber which is an essential part of your daily diet. Tasty & healthy, what else could we have asked for? This crispy potato recipe is perfect for those lazy days as it can be made in minutes. Ideally made during Navratri fasting days, fits will in everyday menu too. When tired of regular batata bhaji or aloo halwa, turn to Crispy Potato and get yourself a treat!




So, let’s get started with Crispy Potato Recipe:

 

Preparation Time: 5 Minutes

Cooking Time: 25 Minutes

Total Time: 30 Minutes

Serves for 2.

 

Ingredients:

 

1) 2 Medium sized boiled potatoes

2) Peanut Oil

3) 1 tbsp Peanuts

4) 2 green Chillies

5) 1/2 tsp Cumin Seeds

6) Salt to taste

7) Chopped coriander leaves

8) 1/2 tsp lemon juice

9) 1 tbsp singhara flour

10) 4-5 Curry leaves

 

Method:

 

Wash potatoes, boil, peel and cut them into cubes.

Place these potato cubes in a plate and sprinkle sighara flour and salt.

Heat oil in a pan, add cumin seeds and wait till they splutter.

Add curry leaves, chopped green chillies, peanuts and sauté them till they nicely roasted.

Now add coated potato cubes in single layer, and continue cooking till the potatoes get brown and crispy.

Add chopped coriander leaves, lemon juice and serve hot.

Serve with Varichya Pithachi Bhakri, Variche Thalipeeth, Yogurt.
