Vangyache Kaap is the Maharashtrian Brinjal Fritters that is coated it semolina and besan. These delicious Brinjal fry are spiced up and shallow fried till golden brown. These Vangyache Kaap make a great side dish with the usual daal rice. This can also be enjoyed as a snack or an appetizer. Eggplant is loaded with calcium and dietary fiber, this is an easy pick for lunch boxes. Preparation Time: 5 Minutes

Cooking Time: 10 minutes

Total Time: 15 minutes

Serves for 2.

 

Ingredients:

1) 1  Big Sized Eggplant

2) 1/2 tsp red chilly powder

3) Pinch of asafoetida

4) 2 tbsp. semolina

5) 2 tbsp. besan

6) Turmeric powder

7) 1/2 tsp garam masala powder

8)  Salt to taste

9) Oil for frying

 

Method:

Wash the eggplant. Make a thin round slices of eggplant.

Take cold water in a bowl, place all the eggplant slices into it.

Mix turmeric powder, asafoetida, garam masala, salt and red chilly powder.

Remove eggplant slices from water and pat dry.

Dip them into the spice mixture.

Mix semolina and besan and dip coated eggplant slices into it.

Heat a nonstick pan.

Spread some oil over it and place the slices on it.

Drizzle some more oil and cook from both the sides till golden brown over medium heat.

Serve as a side dish.
