Boondi Ladoo are basically ladoos made from besan batter. These ladoos got their name from Hindi word “boond” as these are made of fried besan batter droplets. The fried boondis are then immersed in sugar syrup, letting them soak as much of the solution as it can retain. The secret to perfect Boondi Ladoos is the consistency of the Sugar Syrup. The only tricky part of making Boondi Ladoos after getting sugar syrup right is to form perfectly round ladoos. These Boondi Ladoos are perfect for this Ganesh Chaturthi celebrations. Make sure to keep these delicious Boondi Ladoos away from the sweet lovers before the aarti or you might not be left with Prasad to distribute later.

So, let’s get started with Boondi Ladoo;

 

Preparation Time: 20 Minutes

Cooking Time: 25 Minutes

Total Time: 45 Minutes

 

Ingredients for Batter:

1) 1 cup Besan Flour

2) 1/2 cup water

3) Ghee for frying

4) Cashew nuts

 

Ingredients for syrup:

1) 1 cup water

2) 1/2 cup sugar

3) Pinch of yellow colour

4) Cardamom powder

 

Method:

Take besan sieve it in a bowl, add water slowly and make smooth batter.

The batter should be thick in consistency to get perfectly round boondis.

On other flame, mix water and sugar in a saucepan and bring it to boil till it reaches the single string stage.

Check with spoon, the last drop falling should be single string consistency, as shown in picture below.

Add yellow colour and cardamom powder to the syrup and switch off the flame.

Now heat ghee for frying the boondis. Take the boondi ladle and hold it over ghee.

Pour a ladleful of batter on boondi ladel and spread it out.

Fry the boondi till they get firm. Drain them and add them in sugar syrup and mash it a bit.

Let it soak for 1/2 an hour. Add fried cashew nuts.

Take a small portion of this mix and shape it into a ladoo.

Apply the same process for remaining mixture.

Let them set for 2 hours and then serve them or store them in an air tight container.
