Bhogichi Bhaji

Bhogichi Bhaji in Marathi

Serves for 2.

 

Ingredients:

1) 1/2 Cup Val

2)  Eggplants 2-3 medium size

3) 1/2 cup Green peas

4) 1/4 cup Fresh green chickpeas

5) 2 tbsp Groundnuts

6) 1/4 Carrot Cubes

7) 1 Cup potato cubes

8) 2 Onion

9) 1 Tomato

10) Ginger garlic paste

11) Coriander Leaves

12) Malvani Masala

13) Jaggery 1 tsp

14) Oil

15) Salt to taste

 

Method:

 

Heat Oil in a pan add chopped onion and saute till it turned to golden brown.

 

Once it done add ginger garlic paste and chopped tomatoes, saute for 4-5 minutes.

 

Add all vegetable, Malvani Masala, jaggery and little water.

 

Cover with lid and let it cook for another 5 minutes on low flame.

 

Then add salt and mix well.

 

Keep on checking to avoid burning.

 

Switch off the flame.

 

Bogichi bhaji is ready to serve.

 

You can add more vegetables of your choice.

 

Garnish with coriander leaves.

 

Serve hot with Rice bhakari.
