Serves for 2.
1) 10-12 Bhindi( Okra)
2) 1 Onion
3) 1/2 cup Grated fresh coconut
4) 5-6 Garlic
5) 2 Tomatoes
6) Coriander leaves
7) 2 tsp Red Chili powder
8) Turmeric powder
9) Coriander powder
10) Oil for tempering
To make the Paste:
Cut Onion and Tomatoes into thin slices.
Then mix grated coconut, coriander leave powder, red chilly powder,turmeric powder, add onion and tomatoes in a grader and then grind well and make a fine paste.
Wash and wipe bhindi. Cut off both ends. Cut into two small pieces.
Heat a pan. Add oil and crushed garlic and saute till brown.
Add bhindi and fry it over medium low heat until light brown.
Add prepared paste and saute over a high heat.
Stirring continuously, once mixture become dry and start loosing oil, add little water and adjust the consistency.
Now add salt and let it boil for another few minutes.
Garnish with coriander leaves and serve hot with steam rice.
