Glad to present you the Maharashtrian style stuffed okra recipe. I learned from my mother
Bharli bhendi as its known in Marathi is non-soggy, non-mushy recipe.
The mixture of peanuts and grated fresh coconut is used for stuffing.
The stuffing adds to the aroma and taste of this recipe. The recipe is quick and easy to make.

Serves for 2
Ingredients:
1) 20 medium sized okra
2) 2-3 tbsp Oil
3) 1/2 tsp Mustard
4) Turmeric Powder
5) a Pinch of hing
6) Chopped Coriander
Ingredients for Stuffing masala:
1) 1/4 Cup peanuts
2) 1/4 Cup grated fresh coconut
3) Coriander leaves
4) 1 green chili
5) 2-3 Garlic cloves
6) 1/2 tsp cumin seeds powder
7) 1/2 tsp coriander powder
8) 2 tsp goda masala
9) 1/2 tsp lemon juice
10) Sugar for taste
11) Salt to taste
How to cook bharli bhendi ?
Method:
How to prepare for Stuffing Masala :
Heat a pan add peanuts & on a low flame roast it till they turn to crunchy and golden.
Keep aside and let them cool. Peel them.
In a grinder add peeled peanuts, 1 green chili, garlic cloves, grated fresh coconut, coriander leaves and without adding water coarsely grind and keep this mixture aside.
In a mixing bowl, take ground mixture, cumin seeds powder, coriander powder, goda masala, lemon juice, sugar and salt as per taste.
Mix the mixture.
Preparing Okra:
Rinse okra under water then dry them with cloth.
Slice off tip of okra with a knife give a slice on one slit on one side.
Now stuff okra with the stuffing masala.
How to proceed further:
Heat oil and 1/2 tsp mustard seeds and wait till they crackle.
Add hing, turmeric powder.
Add stuffed okra. Stir it and keep a lid and let it cook on low flame.
When okra is half done add remaining stuffing mixture and little water if required cover and cook for another 15 minutes.
Garnish with chopped coriander leaves and serve with dal rice or chapati.

9) When okra is half done add remaining stuffing mixture, cover and cook for another 15 minutes.
10) Do check in between and add little water if required.

11) Garnish with chopped coriander leaves and Serve Bharli Bhendi with Amti bhat or chapati or Ghadichi poli or side dish.
