Besan is the Marathi name for Gram Flour and Poli is the Marathi name for flat bread. Do not confuse this with besan chilla or omellete as this is a sweet dish with besan filling. This besan poli is a basic version of the classic Puran poli. Newbie cooks trying to start cooking, should try this first. Once you have attained perfection in making delicious besan poli, you can move to cooking similar flat breads. Preparation Time: 20 Minutes

Cooking Time: 15 Minutes

Total Time: 35 Minutes

Serves for: 4.

 

Ingredients:

1) 2 cup Besan

2) 2 cup sugar

3) 1/2 cup wheat flour

4) 1 cup all-purpose flour

5) 1/2 cup oil

6) 1 cup ghee

7) 1/2 cup rice flour

8) Cardamom Powder

9) Salt to taste

 

Method:

 

Heat 2 tbsp. ghee and roast besan.

Keep stirring for 15 minutes on low flame.

Once the gram flour is roasted, it’ll release ghee from the sides.

Now add 1 cup hot milk and stir well.

Once the milk is well incorporated in the besan, pour remaining 1/2 cup milk and keep stirring.

Add sugar and stir continuously to avoid lumps, add cardamom powder and mix well. Take off from flame.

In a separate bowl, mix all-purpose flour, wheat flour, salt and add water to make dough.

The dough should be very soft as shown below.

Add 1/2 cup of oil and keep aside for 1-2 hours.

Take a medium size ball from dough.

Spread it on your palm by using fingers.

Make a bowl and place a besan mixture in the center.

Bring the edges together towards the center and join all the edges and pinch them.

Sprinkle some rice flour and start rolling the dough to make a poli.

On a heated tawa, place poli and spread some ghee.

As the cooked side gets browned, turned over and cook the other side.

Besan poli will puff up.

Make all the besan polis this way.

Serve with ghee.
