Batata Bhaji
Batata Bhaji is Maharashtrian potato stir fry as Batata is Maharashtrian term
for Potato or Aloo and Bhaji means stir fry or sabzi. In Indian cuisine there are
various variations of Batata Bhaji but this is the easiest and quickest of them
all. Boiled Potatoes, grated coconut and spices are all you need to make this
tempting dish. This Batata Bhaji is offered to Lord Ganesha during the festival
of Ganesh Chaturthi along with Varan Bhaat and sweets like Ukadiche modak, Fried modak etc.
Not only does this batata bhaji complete a meal with dal and rice but also tastes amazing with hot Pooris alone.

Cooking Time: 10 Minutes
Total Time: 20 Minutes
Serves for 2.
Ingredients:
1) 2-3 Boiled potatoes
2) 5-6 green chilies
3) 1/2 tsp cumin seeds
4) 1/2 tsp mustard seeds
5) 4-5 Curry leaves
6) Coriander leaves
7) Grated Coconut
8) Turmeric powder
9) 1 tsp sugar
10) Oil to tempering
11) Salt
Method:
Heat oil for tempering add mustard seeds and let them crackle, add cumin seeds, curry leaves.
Add chopped green chilies and saute them.
Once chilies are done add potato cubes, salt, turmeric powder and sauté for another 5 minutes.
Add grated coconut. Keep a lid and let it cook for another 5 minutes on medium heat.
Add sugar and chopped coriander leaves and serve hot.
