Preparation Time: 20 Minutes
Cooking Time: 15 Minutes
Makes: 11-12 Modaks.
Ingredients for the Stuffing:
1) 14-15 Almonds
2) 1/2 cup Milk
3) 1/2 cup Ghee
4) ½ tsp Cardamom Powder
5) 1/2 tsp Nutmeg Powder
Ingredients for the Ukad:
1) 1 Cup Rice Flour
2) 1 Cup Water
3) Pinch of Salt
4) 1 tsp of oil or ghee
Directions To make Ukad:
Heat the water in a pan, add salt and ghee and bring to boil.
Turn off the heat and add all rice flour stir it and mix well.
Cover and keep aside for 10 minutes and let the steam trap inside to cook the dough.
Directions To Make Stuffing:
Pour 1 cup of boiling water over the almonds and keep aside for ½ hour.
Drain and remove skins of the almonds.
Puree the almonds with 3-4 tbsp of milk to a smooth paste in a blender.
Heat ghee in kadhai.
Add almond paste on ghee and stir it. Cook over low heat flame.
Boil remaining milk with 3-4 tbsp water, add to the almond mixture and cook for 2-3 minutes.
Stir it continuously till it turned into golden brown.
Once it soaks add sugar and cardamom powder and stir it.
Modak Preparation Method:
Take dough in a plate and rub it with hands.
Put little bit oil if needed.
Make small ball (epx 2 inch) of dough. Keep the remaining dough covered.
Spread ball on hand and make bowl.
Put 1 tsp of Almond mixture in it.
Pinch the bowl on the edges 5-6 time. Pull them together and join them.
Prepare all the modak while preparing covered them in damp cloth.
Steam cook in to the modak steamer (modak patra) for 12-15 mins.
Cool and Serve.
