Amrakhand | Amrakhand Recipe

What is Amrakhand? It is a mango flavoured shrikhand.

It is made by adding mango pulp to the shrikhand. The mango shirkhand is naturally flavoured and coloured dessert as it begets it from the fruit.

Mango shrikhand is a seasonal dessert as it depends on mangoes.

Amrakhand is made during the auspicious day of Gudipadwa as it falls in the mango season.

The homemade amrakhand is rich, creamy and really worth it. There are various brands too which sell packaged amrakhand eg. Amul Amrakhand, Chitale Amrakhand.

This rich creamy yellow coloured amrakhand is best eaten with hot poories

You may add strands of kesar to make it look more opulent.

Ingredients for hung curd:

4 Cups fresh full fat dahi

 

Ingredients for Amrakhand:

1) 8-9 tbsp Sugar

2) 4-5 Green cardamoms

3) Dry fruits of your choice

4) Mango Pulp

 

How to make Hung Curd

Use homemade curd. It should be fresh and not sour one.

Spread clean muslin cloth.

Place curd in the center.

Wrap it from all sides and tightly tie muslin cloth.

Gently press it and hang curd for around 4-5 hours.

If you are keeping for overnight then hang it in refrigerator.

Place an empty container or bowl below it to collect the whey.

You can use this whey in chapati aata or even in rice. Do not waste it.

After 4-5 hours untie cloth and transfer all curd to bowl.

How to Make Amrakhand:

Mix properly with a hand beater.

Add sugar.

Again mix with a hand beater.

The sugar should be dissolve.

Wash the mangoes and peel them.

Chop the peeled mangoes.

In a blender add chopped mangoes and blend them until smooth.

Add Mango pulp to the curd mix it with the spoon.

Check the taste and add more sugar if required.

Add Cardamom powder and mix with spoon.

Garnish with chopped dry fruits and keep into refrigerator and serve whenever you need.

Serve with poori or after lunch or dinner as dessert.

How to make Hung Curd

1) Use homemade curd. It should  be  fresh and not sour one.

1)Wash the mangoes and peel them. Chop the peeled mangoes. In a blender add chopped mangoes and blend them until smooth.

3) Again, repeat the process of  mixing with a hand beater.The sugar should starts dissolving in the mixture. Add Mango pulp to the curd and mix it with the spoon.

Tips:

 

1) While selecting mangoes for aamrakhand select alphonso mango or any sweet mangoes whichever will be available.

2) You can also use ready made mango pulp.
