Vangi bath is one of the most renowned of brinjal recipes. We present you the Maharashtrian version of vangi bath recipe.
This recipe is also much popular in South India regions. Vangi bhaat tastes so yummy because of the freshly ground spices, specially made for Vangi Bhat, that goes in.
The rice, also, begets unique peculiar flavour from the brinjal. An excellent optional recipe for pot lunch party.
This is a no onion no garlic recipe. Garnished with chopped corriander leaves, this dish is served best with raita.

Ingredients for Vangi Bhat powder Masala:
1) 2 tbsp Coriander Seeds
2) 1 tbs chana dal
3) 1 tsp Red chilly powder
4) 1 Cloves
5) 1 Cinnamon
Main Ingredients:
1) Vangi bhat Powder Masala
2) 3-4 Small Size Brinjal
3) 2 cup Ambemohar Rice
4) 2 Bay leaves
5) 1 tsp Jeera
6) 1 green chili
7) 1 medium onion
8) 2 tbsp yogurt
9) 6-7 curry leaves
10) 1/2 tsp mustard seeds
11) 1/2 tsp turmeric powder
12) Chopped coriander
13) 2 tbsp Oil
14) Water 4-5 cup
15) Salt as per required
Method of Making Vangi Bhat powder Masala:
Dry roast coriander seeds and set aside. Now dry roast chana dal for few minutes.
Then add cloves, red chilies, cinnamon and cumin seeds saute it till the nice aroma.
Switch off flame and keep aside and wait till cool completely.
Powder it and add 2 tsp red chilly powder mix it, use 2 tsp powder to vangi bhat and you can keep remaining powder into airtight container for feature use.
Method of Preparing vangi bhat:
Rinse the rice for few minutes in water. Then soak the rice for 30-35 minutes and drain them and keep aside.
Prepare rice and keep aside.
Chop the brinjals and keep them in salted water for 10 minutes.
Heat the oil in a heavy bottomed pan and then add mustard seeds, cumin seeds, bay leaves, add curry leaves and saute for a minute.
Add sliced onion and saute till onions turn translucent.
Add green chilies, chopped brinjals and turmeric powder mix well.
Cover and cook till the brinjals are done completely.
Add vangi bhat powder masala, yogurt and mix it well.
If require add little water and saute for 2 minutes.
Now add cooked rice and mix well adjust salt as per your taste.
Simmer the flame and let it cook for another 10 minutes.
Garnish with chopped coriander leaves and serve hot with achar or fried papad.
